A popular West African meat rub, it is the ultimate in rubs. Made with an assortment of carefully selected spices, it works wonderfully on beef,chicken and fish. The raw meat is dipped first in olive oil then the spice mixture before grilling. A little of the mixture (set aside) is scattered over the cooked meat before serving.
